Let me tell you: I have searched high and low for a good low carb tortilla recipe.
This is the best one I've come across so far, and one of the reasons is because it is super easy and stays together wonderfully.
The ingredients are simple: water, oil, eggs and a mix of flours. I will be honest with you and tell you that after the first few batches, I stopped using that mix of flours. I pretty much just use whatever gluten-free flour or gluten-free flour mix that I have on hand. It really makes no difference. And I'm sure you could use regular white or whole wheat flour as well, keeping in mind that it will most likely not be as low in carbohydrates with that substitution.
After it's mixed, pour the batter into a skillet to brown:
Flip and kind of brown the other side. Then it's done!
I actually make one of these for my husband's lunch every. single. day. They are quick and easy for me to make and they hold up great for him at work. Two pins up!
